(Chickpeas) Chanay or Chole is famously eaten for breakfast in  Punjab, Karachi and Rawalpindi, and many other cities. They have a delicious taste, aroma, and look. Topped with masala lemon and pickle they taste awesome. 

When you take the first bite of them, your mouth will fill with taste and spice. A flood of taste. Yes.

Don't need to do so much, with just a few steps your restaurant-style Cholay is ready. We think that restaurant-style recipes are complex, but no they are easy and time-saving. Just try this recipe and next you'll prefer to cook chanay at home. 

So without wasting time. Let's get started.

Time required

For soaking:  overnight

For cooking: 45 to 50 minutes

Servings: 5 to 6 persons

Ingredients: 

  1. Chickpeas (Chote Cholay): half kg
  2. Baking soda: half tbsp 
  3. Salt according to taste 
  4. Oil: 400 grams or 1 and a half cups
  5. Onion (sliced):4 medium-sized
  6. Ginger garlic paste: 1 and a half tbsp
  7. Green chilies paste: 2 and a half tbsp
  8. Chicken stock cube: 1
  9. Curd: 250 grams
  10. Red chili powder: 1 tbsp 
  11. Turmeric powder: half tbsp 
  12. Cumin seeds powder :1 tbsp
  13. Coriander powder: 1 tbsp
  14. Garam masala powder: 1 tbsp 
  15. Cardamom: 2 
  16. Cinnamon Stick 1 
  17. Lemon slice, mix vegetable pickle  for garnishing

Preparation: 

  • Soak chickpeas overnight.
  • Boil soaked chickpeas by adding salt and baking soda in 2 liters of water. 

Recipe:

  • Add ghee to a pot and heat. Add onion and fry until they get golden brown color.
  • Now transfer them to the grinder, add curd,  and make a fine paste. 
  • Set it aside. 
  • In that same ghee, add ginger garlic paste and fry for a minute. 
  • Then add Green chilies paste (grind chilies with water and make a paste.)  to it. And cook again for 2 minutes.
  • Now add cardamom, cinnamon, salt according to taste  (but don't forget that we have also added salt in chickpeas while boiling them.), red pepper powder, turmeric powder, coriander powder, and cumin seeds powder, and mix well. Add 2 tsp water and cook for 2 to 3 minutes.
  • Add onion curd paste and mix. Cook while stirring. 
  • Add the chicken stock cube and mix. 
  • Add water occasionally if it burns. 
  • Cook until oil comes to the top.
  • Add boiled chickpeas, mix well and cook for 5 to 7 minutes.
  • Add water of chickpeas to the gravy. The water we use to boil chickpeas. 
  • Cook for 15 minutes. 
  • Add garam masala powder, cover, and cook for 10 minutes. 
  • Mouth-watering and aromatic Cholay is ready to eat. 

Garnishing:

  • Take them out.  Garnish with a lemon slice, and green chilies, and mix vegetable pickle. 

Servings suggestions:

  • Serve with Halwa Puri, Parathas, Naan, and chanay Chawal. These are the best serving options for breakfast.
