Biryani is biryani whether it's veg or chicken. Why? Because biryani has a different recipe than Pulao. If you don't agree or maybe your friends don't agree with you. Then cook biryani with this recipe, let them taste, and then ask. Their opinion will not only change but they request you to cook such a mouth-watering dish again after. Be ready to cook the best biryani ever. Read till the end and enjoy cooking.

Serving: 5 to 6 persons
Ingredients:
For boiling rice:
- Rice: 1kg
- Oil: 1tsp
- Cumin seeds: 2 tsp
- Cloves: 4 to 5
- Black peppercorns:4
- Bay leaves: 2
- Salt: 1 tsp
- Vinegar: 1 tsp
For gravy:
- Mix vegetables :( potatoes, capsicum, peas, and carrots ) 1cup of each.
- Ghee: half cup
- Dry fruits :1 cup
- Almond:6 to 8
- Salt: according to taste
- Ginger Garlic paste: 1 tsp
- Powder or crushed coconut: 1tsp
- Char magaz ( melon seeds) :1 tsp
- Khashkhash (poppy seeds): 1 tsp
- Curd:half cup
- Onions:2 medium-sized (sliced)
- Tomatoes: 2 chopped
- Garam masala:2 tsp
- Garam masala powder: 1 tsp
- Cardamon small :3
- Cardamon big: 2
- Kashmiri red pepper: 1 tsp
- Yellow color : half tsp
- Orange color: half tsp
- Milk: half cup
- kewra essence: a few drops
Recipe:
For boiling rice:
- Soak rice for one hour.
- Add water to a pot, add 1 tsp oil, 2 tsp of garam masala ( 1cinnamon stick, 1 tsp cumin seeds, 3 to 4 black peppercorns, clove 4 to 6, and 2 bay leaves.), 1 tsp vinegar, and salt.
- Add soaked rice, and boil till 3/4 done.
- Strain and set aside.
For gravy:
- Cut all vegetables into small pieces.
- Grind coconut, almonds, KhashKhash (poppy seeds), and char magaz(melon seeds), with curd and make a fine paste.
- Add 2 tsp oil or ghee to a pan, and add onion to it. Fry onion till golden brown. Take half onion out for garnish.
- Add gram masala, and ginger garlic paste. Then mix for 30 seconds.
- Add red pepper powder, and tomatoes, and cook for 3 minutes.
- Add all vegetables except capsicum and cook for 3 to 5 minutes. Add 1 cup of water and cook on low flame.
- When vegetables, comes to tender, add capsicum, and curd paste, cover, and cook on low flame for 7 to 8 minutes.
- Now in a big pan add 1 cup of oil or ghee.
- Add big & small cardamoms. And fry.
- Add dry fruits and fry till golden.
- Add vegetables along with gravy, mix well and sprinkle garam masala powder.
- Mix well, and cook for 1 minute.
- Vegetable gravy is ready.
Layering and assembling:
- Add yellow color to hot milk and mix.
- Add orange color to milk and mix.
- In a separate pot, add some oil from the gravy, add the first layer of rice at the bottom, then add gravy.
- Similarly, make 3 to 4 layers.
- Then at the top, add rice, yellow color, orange color, kewra essence, fried onion, cashew nuts, and fresh coriander.
- Steam (Dum) for 10 to 15 minutes.
- Delicious vegetables Biryani is ready.
Serve with :
- Serve with Raita, Chutney, Chicken Curry, Shami kabab or Salads.
Raita
Ingredients:
- Cucumber: 2 medium-sized
- Onion :1
- Tomatoes: 1
- Green chilies: 4
- Fresh coriander: 2 tsp
- Curd (dahi): half kg
- Milk cream: 1 cup
- Salt :to taste
- White cumin seeds (safaid zeera): 2 tsp
Recipe :
- Chop cucumber, onion, green chilies, coriander, and tomatoes
- Mix curd and milk cream with a spoon and add salt and cumin seeds.
- Add chopped vegetables and mix well.
- Best raita with biryani and pulao.
