Normally we youngs or kids do not like to eat leafy vegetables. We don't like their taste or smell. But they are very good for our health. They help in lowering high blood pressure, helps in maintaining cholesterol level, and hence protect against heart disease.
Again we don't like them, so what to do. Now I have a solution, I have a delicious recipe for leafy vegetables. Just read it and cook. Everyone is going to love it.
So let's get started.
Time required : 3 hours
Servings: 5 persons
Ingredients:
- Water: 2 cups or as required
- Spinach (palak):1 bunch
- Sarson ka Saag (fresh Mustard leaves): 1kg
- Fresh coriander leaves: 1 cup
- Bathua (Goosefoot): 1 bunch
- Green chilies chopped: half cup
- Chopped Garlic Ginger: half cup
- Maize flour or cornmeal ( makai ka atta): 2 tsp
- Onion: 1 medium-sized
- Tomatoes: 2 chopped
- Oil or butter: 1 cup
- Salt: according to taste
- Red pepper powder 1tsp
- Turmeric powder half tsp
- Button chilies and sliced ginger garlic: 1 tsp for garnish
Recipe:
- Wash all leafy vegetables.
- In a pot add water, vegetables, half ginger-garlic, green chilies, and salt.
- Cover and boil for 2 to 3 hours.
- Then on low flame, blend them to a paste with a hand blender. Add maize flour, mix, and stir well.
- Cover and cook until it gets thickened.
- Set aside.
- Now in a pot add butter or oil. Add onion and fry till light golden add chopped ginger and garlic and fry until golden color.
- Now add tomatoes, red pepper powder, half tsp salt, and turmeric powder.
- Cook for 7 minutes until oil come to the top.
- Now add Saag mixture and mix well.
- Cook for 5 to 7 minutes on medium flame.
- Delicious Saag is ready.
Garnish:
- Fry button chilies and sliced Ginger Garlic till light golden color. Take out. Garnish Saag with fried ginger garlic and button chilies.
- Or
- Garnish with fresh coriander and green chilies.
Serve with:
- Serve with (makai ki roti )maize flour bread or cornmeal bread, Butter (Makkhan), and Lassi (yogurt water).
