Mandi is a popular dish that originated in Yemen. It is also found in Egypt, India, Arabian Peninsula, Pakistan, and Turkey.
Mandi is made with rice, the meat of lamb, camel, goat, and chicken, and a mixture of spices called Hawaij. It is also called the mandi massala.
Hawaij is a mixture of spices that you can buy prepared from a shop or can prepare at home very easily.
The recipe for Mandi Rice and meat is very easy. Just follow these steps and don't skip any. Usually, Mandi is cooked in tandoor. Tandoors are ovens made of clay.
Not everyone had a tandoor. So we gonna cook chicken in oven and rice on the stove.
Without waiting time let's get started.
Time required: 5 to 6 hours for chicken marination and 1 hour for cooking both.
Servings : 3 to 4 persons
Ingredients:
Hawaij:
- Cumin seeds: 2 tbsp
- Black peppercorns: 2tbsp
- Turmeric powder: 2tsp
- Green cardamom: 1 tbsp
- Cloves: half tsp
- Coriander seeds: 1tbsp
- Saffrons: half tsp
For chicken marination:
- Chicken: whole chicken with skin
- Melted butter: 2 tbsp
- Saffron: 1/2 tbsp
- Hawaij: 2 to 3 tbsp
- Red color: 1 pinch
- Lemon juice: 1 tbsp
- Salt: according to the taste
For Rice
- Rice: 1 kg
- Ghee: half cup
- Butter: 2 tbsp
- Onions:1medium sized chopped
- Garlic paste or crushed: half tbsp
- Chicken stock cubes: 2
- Cinnamon sticks: 2
- Green cardamom: 3
- Black peppercorns: 1 tsp
- Dried lemon: 1
- Lemon juice: half tsp
- Green chilies: 2 tsp
- Hawaij: 1 tbsp
- Salt: according to taste
Recipe:
- Hawaij :
- Add all spices to a mixer or blender and make powder. This powder is hawaij. The Mandi Massala.
- Chicken:
- Cut the chicken into two equal parts from the center.
- In a bowl add hawaij, salt, red color, lemon juice, saffron, and melted butter. Mix well.
- Add this mixture of spices to the chicken. Spread it all around the chicken.
- Let it rest for 6 hours in the refrigerator.
- Brush the oven tray with oil.
- Preheat oven to 200°.
- Now transfer the chicken to the oven tray. Brush oil on the chicken and bake in preheated oven for 60 minutes. From both sides.
- In the meantime cook rice.
- Rice :
- Wash rice and soak for 1 hour.
- In a pot add oil and onion. Fry onion for 2 minutes.
- After 2 to 3 minutes, add ginger paste, cardamom, cinnamon, black peppercorns, and dried lemon, and cook until the onions get a golden color.
- Add 3 to 4 tbsp of water.
- Add Hawaij, green chilies, salt, and lemon juice, and cook for 1 minute.
- Add 4 tsp of water and mix. Add Chicken stock cubes and cook for 5 minutes.
- Add half a kg of water and let it boil.
- When water starts boiling.
- Add soaked rice and gently mix them.
- Cook rice until 3/4 of the rice is done.
- Then cook rice on dum. Cover them and cook on low flame for 15 minutes.
- Delicious Mandi Rice is ready.
Garnishing:
- Dish out Mandi Rice on a plate. Place the Chicken piece at the top.
