Pulao is everyone's favorite dish. Either it's Chicken pulao, Mutton pulao, Beef Pulao, etc. We just love it in all forms.
I don't like vegetables but vegetable pulao is my all-time favorite. Its flavor, aroma, spice, and most importantly taste. Because taste is everything. So today I'm going to share my special pulao recipe with you guys.
Just read it, try it, and enjoy. So without wasting time. Let's get started.
Time required: 1 hour for preparation. And 1 hour for cooking
Servings: 5 persons.
Ingredients:
- Rice: 1 kg
- Ghee or oil: half cup
- Onion sliced: 1 medium-sized
- Tomatoes sliced: 1 medium-sized
- Salt according to taste
- Cumin seeds: 1tsp
- Green Cardamom : 3
- Black cardamom :1
- Black peppercorns: 5 to 6
- Cloves: 4
- Cinnamon stick: 1 medium-sized
- Star anise: 1
- Bay leaves: 2 to 3
- Red pepper powder :1 tsp
- Turmeric powder:half tsp
- Red pepper flakes:half tsp
- Coriander powder: half tsp
- Mixed Achaar or pickles: 2 tsp
- Tamarind: 1 tsp
- Peas: 1 cup
- Carrots: 1 cup
- Capsicum: 1 cup
- Green chilies chopped: 4 to 5
- Fresh coriander, cumin seeds, and green chilies for garnishing
Recipe:
- Wash and Soak rice for 1 hour in water.
- In a pot add oil, cumin seeds, cardamom, star anise, black peppercorns, cinnamon, bay leaves, cloves, and onion. Let it fry until the onion gets golden brown color.
- When the onion gets golden, Add had a cup of water, Tomatoes, red pepper powder, salt, red pepper flakes, coriander powder, and turmeric powder, and cook.
- Cook until tomatoes get tender.
- Then add Vegetables like capsicum, carrots, peas, and green chilies.
- Mix well and Cook for 5 to 19 minutes.
- Then add tamarind and pickles. Mix well and Cook for 2 minutes.
- Now add water. Half liter water for soaked 1 kg rice. And 1 liter for unsoaked rice.
- Add 1 tsp of vinegar and 1 tsp of lemon juice to the water and let it boil.
- When water starts boiling add soaked rice to it.
- Mix softly and cook until 3/4 of the rice is done. Also, check the salt in it.
- If the rice is 3/4 done. Then they are ready for dum.
- Sprinkle fresh coriander, green chilies, and cumin seeds on them.
- Cover and cook on (dum)flame for 15 minutes.
- Tasty and yummy pulao is ready.
Serve with:
Serve with Raita, kabab, and salad.
