As Eid-ul-Adha is here so I'm back with an extremely delicious recipe. kaleji is everyone's first eid day lunch. And if you wanted to cook it for the first time to impress your family, then try this recipe. With fewer masalas kaleji tastes best. Its authentic taste with too much spice is my promise.

Time required:40 minutes.
Servings: 6 to 7 persons.
Ingredients:
- Kaleji (liver) :1 and a half kg
- Ghee: 1 and a half cup
- Onion: 4 medium size
- Tomatoes: 4 medium size
- Ginger garlic paste: 2 tsp
- Salt: according to taste
- Red pepper powder: 2 tsp
- Turmeric powder: 1 and a half tsp
- Black pepper powder: half tsp
- Cumin seeds powder: half tsp
- Garam masala powder: half tsp
- Red pepper flakes: half tsp
- Coriander powder: half tsp
- Vinegar or lemon juice: 1 tsp
- Green chilies and fresh coriander for garnishing.
Recipe:
- Wash kaleji with water. Add 1 tsp vinegar or lemon juice, and salt and leave for 10 to 15 minutes.
- In a pot add ghee, onion, and Cook for 1 minute.
- Wash kaleji again with water.
- Add kalonji, and salt to the pot and cook on low flame.
- Cook until onion is completely mixed with kaleji. For about 5 minutes.
- Add ginger-garlic paste and mix. Add 3 tsp of water, red pepper powder, turmeric powder, and red pepper flakes. Mix and Cook.
- Meanwhile, make a paste of tomatoes or finely minced tomatoes.
- Add the paste and fry till oil comes out. For 5 to 8 minutes.
- Add coriander powder mix and Cook.
- Add 1 cup of water, mix, cover, and cook.
- After 5 minutes add cumin seeds powder, black pepper powder, and garam masala, and cover for another 2 minutes. Flame off.
- Delicious kaleji is ready to eat.
Garnishing :
- Garnish with sliced ginger and green chilies. And lemon.
Serve with:
- Serve with fresh naans or parathas.
