Hope you guys are doing well. Today I'm going to share the Beef Nihari recipe with you.
Nihari was originally started in Mughal Era as a breakfast dish. Nihari is a favorite breakfast dish in Pakistan also, especially in Punjab and Karachi. It is a dish full of flavor. It boosts immunity.
Nihari is slowly cooked meat and bones (separately). People do cook them in a pressure cooker to save time but if you want authentic nihari taste. Cook, it according to my directions. As I'm sharing authentic recipes with you guys.
So without wasting time let's get started.
Time required: 2 to 3 hours
Servings: 6 to 8
Ingredients:
- Beef meat:1kg cut into large pieces
- Ghee or oil: 250 grams
- Fine Wheat flour: half cup
- Onion chopped: 1 medium-sized
- Garlic crushed: 2 tsp
- Salt: 1 tsp or according to taste.
- Red Pepper powder: 1 tsp
- Turmeric: half tsp
- Green chilies and ginger for garnishing
- Spices For soup (yakhni):
- Beef bones: half kg
- Coriander seeds: 2 tsp
- Bay leaves: 3
- Nutmeg (jaifil): a small piece
- Mace (jalvitri): 2 pinch
- Black pepper corners: 1tsp
- Cinnamon sticks: 2 to 3
- Long pepper (pipli): 2 pieces
- Green Cardamom: 4 pieces
- Black Cardamom: 2 pieces
- Star anise: 1 small piece(Grind them to a fine powder. Let's say this spice 1)
Special spice 2 (masala)
- Fennel seeds: 1 and a half tsp
- Cumin seeds: 1 tsp
- Dried ginger (sund): 2 small pieces(Grind these 3 spices to a fine powder. let's say this spice 2)
Recipe:
- Firstly, we prepare bones broth or soup (yakhni).
- For that wash bones.
- Add approx 2 litter water in a pot. Add bones, coriander and bay leave.
- Cook uncovered for 5 to 10 minutes then cover and cook for 1 hour.
- After 1 hour, take bones in a separate bowl and strain soup in a separate bowl.
- Now in a pot add ghee and onion. Fry onion till light golden. Add 3 tsp of soup.
- Add beef meat and crushed garlic. Give it a good mix.
- Add salt, turmeric powder, and red pepper powder.
- Mix and cook for 5 minutes. On medium flame. Add 1 tsp of spice 2 in it.
- After that add all soup to it. Cover And cook for 1 hour on low flame.
- Now mix fine wheat flour in water. It should have a consistency like milk. It shouldn't be thick.
- Add flour, while stirring so that it doesn't settle down. Otherwise, it will lessen the taste.
- Add bones to nihari.
- Take half a cup of water and add 1 tsp of spice 1 to it and mix well.
- Now add this to the nihari. Give it a good mix.
- Now cook nihari on dum. Just like we cook rice on dum.
- Cook for 1 hour on low flame.
- Turn the flame off and set nihari aside for 10 minutes, so the oil comes to the top.
- Take oil in a separate bowl if want to.
Garnishing:
- Take it out in a bowl and place a big piece of meat in the center. Add some oil at the top.
- Garnish with green chilies, sliced ginger, and lemon.
Serving :
- Serve with naan, homemade roti, or puri.
