Baingan bharta is an Indian dish prepared by mincing grilled eggplant and mixing it with tomato, onion, herbs, and spices. Grilling the eggplant over charcoal or direct fire makes the dish smoky flavored. Mashed eggplant or brinjal is then mixed with cooked chopped tomato, browned onion, garlic, cumin, fresh cilantro (coriander leaves), chili pepper, and vegetable oil. Traditionally, the dish is often eaten with flatbread with roti or paratha. And is also served with rice or raita, a yogurt salad.
It is one of the yummiest dishes.

I'm sharing with you a very easy and quick Baingan Bharat recipe.
So without wasting time let's get started.
Time required 30 minutes
Servings 3 persons
Ingredients :
- Brinjal :1 large size
- Tomatoes:2 medium-sized
- Garlic:4
- Green chilies:4 to 6
- Oil: 4 tsp.
- Onion chopped: 1 medium-sized
- Cumin seeds: 1tsp
- Fennel seeds: 1 tsp
- Turmeric powder: 1/4 tsp
- Red chili powder:1tsp
- Coriander powder: 2tsp
- Salt: according to taste
- Water:1/4 cup
Recipe:
- Take large size brinjal or eggplant grease with oil.
- Make 4 slashes. Roast until done.
- Place the brinjal over direct fire.
- Grease tomatoes, garlic, and green chilies with oil.
- Roast tomatoes, till they are cooked or their skin turned back.
- Roast garlic and green chilies for 1 minute.
- Peel off the outer burnt skin.
- Finely chop the eggplant, tomatoes, garlic, and green chilies.
- Smoothly mash them with a spatula.
- Add 2 tsp of oil to a wok. Add fennel & cumin seeds.
- Add onion and fry till it turns light golden.
- Now add salt, turmeric, red chilies, and coriander powder. Mix well
- Add water and cook for 1 minute.
- Add mashed ingredients and mix well.
- Cover and cook for 6 to 8 minutes.
- Switch off the flame.
Garnish:
- Garnish with fresh coriander leaves, green chilies, and green onion.
Serve with:
Serve with roti or rice. Along with green chutney and achaar.
