Pumpkin Curry with curd is a very authentic Kashmir dish. It's very yummy, healthy, and nutritious. As pumpkin has a lot of nutrients particularly rich in vitamin A.

Also, nutrient density and low-calorie count may help in weight loss. As It has 0.1g of fats per 100 grams, which is zero % of the daily diet.

As it has many benefits.  So let's get started without wasting any bit of time.

Serving: 3 to 4 person 

Time required: 35 to 40 minutes.

Ingredients:

  1. Pumpkin(in cube): quarter kg or 2 cups
  2. Oil or vegetable ghee: 5 to 6 tsp or a half cup
  3. Onion sliced: 2 medium-sized
  4. Ginger garlic paste: 1 tsp
  5. Red Tomatoes chopped: 2 medium-sized
  6. Red chili powder or Paprika powder: 2tsp
  7. Turmeric powder: 1 tsp
  8. Salt: according to taste
  9. Coriander powder: half tsp
  10. Curd:  half kg
  11. Green chilies chopped: 2 tsp
  12. Handful coriander for garnishing

Recipe:

  • Beat curd for 4 minutes with a hand beater, then add water and beat for another 3 minutes. It is known as lassi (curd water). Set it in the fridge. 
  • Peel off the pumpkin and cut it into cubes.
  • Add oil to a pot. Add onion and fry till translucent then add ginger, and garlic paste and cook till golden color.
  • Add 1 tsp of water, and tomatoes and cook for 1 minute.
  • Add all spices to the tomatoes and cook for 5 to 8 minutes. Or until oil comes to the top.
  • Now add pumpkin cubes, and mix well.
  • Cook pumpkin until it completely tenders. When it gets completely tender. Gravy is ready. 
  • Mash it smoothly with a spatula, on medium flame.
  • Now add lassi or curd water to the gravy simultaneously while mixing. Don't skip mixing gravy while adding lassi or curd water. 
  • Mix constantly for 5 to 10 minutes.
  • Then cook on low flame for 5 to 8 minutes.
  • Gradually mix while cooking. It should have a little thick consistency. 
  • When oil comes on the upper surface. Turn off the flame. 
  • Delicious pumpkin curry is ready.

Garnishing:

  • Take it out in a bowl.
  • Sprinkle fresh coriander and green chilies.
  • Add butter in the middle.

Serve with:

  • Serve with some Makai ki roti (cornbread), or simple roti.

  • Green chilies and onions enhance its taste.
  • The best way to eat pumpkin curry is that take small pieces of roti and mix them with curry and eat by hand.
