Rasgulla is a soft spongy dessert. Mainly eaten in Pakistan, India, and Bangladesh. Rasgulla is round or long balls made from curdled milk (cheese or paneer) and cooked in sugar syrup.
They are everyone's favorite dessert. And super easy to cook. As they don't require tricky measurements like other desserts. If you are a beginner still you can cook perfect Reasgulla. Just follow my recipe till the end and enjoy.

Time required: 35 minutes
Servings: 16 pieces
Ingredients:
- Milk: 1.5 liter
- Lemon juice or Vinegar: 2 tsp
- All-purpose flour ( maida ): 2tsp
- Sugar: 2 cups
- Water : 3 cups
- Cardamom: 3 to 4
- Pistachio for garnish
Recipe:
- Pour milk into a pot. Bring it to boil.
- Then turn the flame off and stir milk for 2 minutes.
- Add lemon juice or vinegar to half a cup of water. Mix it.
- Add this to milk gradually while stirring the milk. It curdled the milk. Let it rest for 2 minutes.
- Now in a bowl place strainer. Over the strainer place any cotton cloth.
- Now strain the milk through it. Wash with water to eliminate the taste of lemon juice or vinegar.
- Squeeze it to remove excess water.
- Spread curdled milk on a plate or tray. Let it rest for 1 minute.
- Now add 2 tsp of all-purpose flour(maida) and mix. Knead it. There shouldn't be any clots or lumps.
- It should be soft and smooth. It is called paneer, cheese, or chenna.
- Now make small round or long balls from this cheese.
- Add 2 cups of sugar, cardamom, and 3 cups of water to a deep pot.
- Boil until the sugar melts down completely. Boil for 15 minutes.
- Then add balls to it, cover, and cook for 10 to 15 minutes on low flame.
- When Rasgulla doubles in size then take them out in a bowl along with sugar syrup.
- Refrigerate rasgullla for half an hour and serve.
