Like  roadside paratha rolls not dry at all , in fact it is creamy and juicy. it has different taste of spices herbs and veggies. so try this for once and forget about other rolls . Believe me this is the best recipe .  obviously you are thinking that  what is special in this recipe, chicken malai boti (chicken creamy pieces) which we marinate in a flavourful mixture then fry . So firstly we are going to make 2 chutney , chicken malai boti, then assemble them to make perfect paratha roll or wrap.

Ingredients:

Green Chutney:

  1. 1/2 cup Yogurt
  2. 2-3 Green Chili
  3. 4 tbsp Fresh Coriander
  4. 1 tbsp leaves Mint
  5. 4-5 Garlic Cloves
  6. 1 tsp Chopped Ginger

Pyaz Chutney:

  1. 1 cup Onion
  2. 1/2 cup Tomatoes
  3. 1/4 Fresh Coriander
  4. 2 tbsp. Fresh Mint leaves
  5. 2-3 Kashmiri Chili
  6. 3-4 Garlic Cloves
  7. 2-3 tbsp Tamarind pulp
  8. 1/2 tsp chaat masala
  9. 1/2 tsp mustard seeds
  10. 1 tbsp. Oil

Ingredients:

  1. 500g Chicken Boneless
  2. 1 tbsp. Oil
  3. 1 tsp mustered seeds
  4. 1 tbsp lemon juice
  5. 4 tbsp cream
  6. 1 tsp salt
  7. 1 tsp coriander powder
  8. 1/2 tsp garam masala powder
  9. 1 tsp black pepper powder
  10. 1 tsp white pepper powder
  11. 1 tsp cumin powder
  12. 1 tbsp kachri powder
  13. 4 tbsp Cream
For Assemble
  1. Parathas : 2 to 4 paratha
  2. Onion as required
  3. Mayonnaise as required
  4. Cucumber as required

Recipe:

  • Green Chutney:
  • Add Yogurt, Green Chili, Fresh Coriander, mint, garlic cloves, chopped ginger and grind it well.
  • Malai boti:
  • Take the chicken in the bowl and add green chutney, lemon juice, salt, coriander powder, garam masala powder, white pepper powder, cumin powder, kachri powder, cream and marinate it for 2-3 hours.
  • Add 2 tsp oil in a pan and fry until chicken is done.
  • Onion Sauce:
  • Add Onion, tomatoes, fresh coriander, mint, kashmiri chili, garlic cloves, salt, tamarind pulp in a grinder and grind it well. this is onion chutney
  • Now heat the cooking oil in the pan and fry mustard seeds for a while
  • Now add grinded onion chutney in the pan and cook for it for a while
  • Now add salt, chaat masala, tamarind pulp and cook it well
  • Assembling:
  • Take a paratha and paste the onion sauce and mayonnaise on it.
  • Add some malai boti and onion slices, cucumber slices and roll it.

Serve:

  • Serve it with green chutney and onion sauce.
